Yesterday, it was the largest cookie, today it’s the largest (and most popular) Middle Eastern spread. New York-based Sabra Foods, owned by Israel’s Strauss-Elite Ltd, broke a world record, making a plate of hummus 10.5 feet (3.5 meters) in diameter. Company president Yehudah Pearl said the task was not easy. “Our chefs ground the hummus for two days to prepare a sufficient amount,” he said. “They worked all day.” The publicity stunt was aimed at expanding Sabra’s market share and hummus' popularity in America. Hummus is made of ground chickpeas and is Israel’s most popular spread with any Middle Eastern meal. “Hummus is an international food product; it crosses the boundaries of the Middle East,” Pearl said. Sabra is a distributor of spreads and Middle-Eastern foods in the east coast and Europe. Sabra was founded 20 years ago and controls about of a third of the American hummus market. Strauss-Elite bought 51 percent of the company’s shares a few months ago.
